using the water field spell to summon heart earth+ HEdragon?

I'm fascinated by the idea of using Heart-eartH Dragon, but it's clearly meant for a very dedicated Deck.

 

Your idea works, but it's not very efficient. It requires you to run a lot of Fish monsters, most of which are only so-so, and bring out Coelacanth for things to get rolling.

 

The first flaw with your concept is you dont have a way to reliably Summon Coelacanth. While Foolish Burial on Angler will provide Tribute fodder, I dont see other methods of sending Angler from hand or Deck.

 

Coelcanth's next problem is the fact it pretty much exists to spam Fish, and bringing out Heart-eartH in this manner is less effective than bringing out 2 Rank 4 Xyz, or 2 Synchros. And when you mention the "or 2 Sphere" question, the answer is because 2 Dyson Sphere are more dangerous than 1 Heart-eartH, in terms of IMMEDIATE threat. Heart-eartH is a terrifying card, but it's not invincible and it relies on your opponent to have monsters and/or be unable to destroy it, and bringing out 2 2800 ATK monsters that can't be attacked is threatening to take out up to 5600 LP immediately, plus Coelcanth is still on the Field.

 

Ignoring that for now, though...

 

You could probably easily assemble 3 Level 2 WATER monsters and Lemuria for Number 53, but then you have to find a way to get rid of its Materials so that when it dies, you can bring out a (much less effective) Number 92. But for that, I'd use Frogs and Nimbles, since Swap Frog will trigger Angler if you discard it, giving you 3 Level 2 WATER monsters with just one play. But considering Number 53 is a passive monster compared to Number 92, this is easier, but less rewarding.

 

Another option is to use Galaxy Queen's Light. If you do the above combo, and do another Swap Frog and/or Salvage shenanigan in order to bring out 4 Nimbles and a Level 4 WATER, you could then use Lemuria and Galaxy Queen's Light to make them all Level 9 (Or Level 7 if you prefer that). Then you could go for Heart-eartH and Dyson Sphere.

 

Lemuria's greatest issue is that with the right combos, you can essentially bring out ANYTHING, and while a Frog or Nimble engine can tap into that potential...the dedication is enormous and makes it a bit difficult at times to decide how to focus such a Deck.
